Sazerac Co has started distilling whisky at its Old Montreal Distillery in Canada.
The New Orleans-based company said this week that a new still has started whisky production at the site “for the first time in decades”. Sazerac is yet to reveal which Canadian whisky or whiskies will be made at the facility.
The company also intends to experiment with new whiskies at the site, which it said dates back to 1929.
“With over 500,000 Canadian whisky barrels in inventory, we’re anxious to get started experimenting here in Montreal similar to what we do at our other distilleries,” said Drew Mayville, Sazerac’s master blender.
The Old Montreal Distillery employs about 100 people. The facility currently bottles single barrel Canadian whisky Caribou Crossing, among others.
According to the latest joint just-drinks/IWSR Global International Whisky Insights report, Canadian whisky has suffered from a long-term lack of investment and stunted growth. The report finds that this is beginning to change now, and the category’s CAGR between 2011 and 2016 was a healthy +6.1%.
