Scottish company Buck & Birch has released a botanical spirit blended with raw sap and wild birch flavours.

The 39.6%-abv Birch rolls out this month in UK alcohol retailers and on Amazon. Buck & Birch described the spirit as a “new alternative” to gin or vodka.

“The birch has always been integral to our business,” said co-founder Tom Chisolm. “So we knew we wanted to create something in honour of this amazing tree but harnessing all of its character was key and therefore needed lots of love and development before we could get to this point.”

Buck & Birch sells several spirits using wild botanicals. Amarosa is rosehip rum liqueur packed in a 50cl bottle, while Aelder Elixir is a wild elderberry liqueur.

Last month, Scottish start-up Birkentree released a birch water designed to be added to Scotch whisky.
