Camus has released a Dordogne Cognac as it makes use of appellation rules that allow the spirit to be made outside of its traditional home.

The Camus Saint-Aulaye Special Finish Cognac was produced in Saint-Aulaye, one of the last villages in Dordogne still entitled to the Cognac appellation. It is the result of a partnership between Camus and the village, started in 2014, that aims to prevent the appellation from disappearing.

Only 3,000 bottles a year will be produced, priced at EUR55 (US$61) each. The eaux-de-vie are aged in fine grain oak casks and matured in Saint-Aulaye's castle. After the primary ageing, the Cognac is transferred into first-fill Monbazillac sweet wine barrels.

Camus has been behind a number of innovations in the past few years. In November, the Cognac house sought to bring back the age of boat-based spirit maturation by transporting ten of its casks across the Atlantic on a classic tall ship. Barrels were taken from France to Barbados, a journey of 45 days. They are being matured for a further year in Barbados at the Foursquare Distillery.
