Abstract: Consumption ofbeverages enriched with oxygen, or oxygen mixed with another gas such as carbon dioxide,is claimed to benefit the immune system.  High levels of oxygen can be incorporatedinto a beverage under high pressure, but most of it is lost if the beverage is thenpackaged in a container.  A commercially viable method of filling containers such ascans and bottles with beverage containing high levels of oxygen is disclosed.  Thecontainers are prefilled with oxygen under pressure.  The oxygen-enriched liquid isthen introduced under a higher pressure.  This procedure leaves an oxygen cap betweenthe level of the liquid and the rim of the container, which prevents escape of oxygen fromthe liquid.  Apparatus for performing this process is also disclosed.

Abstract: The inventionrelates to microcapsules in which yeasts, bacteria and enzymes can be immobilized for usein the production of alcoholic beverages, especially wine and sparkling wine.  Thecapsules are designed so that microorganisms added during the processing of wine, etc.,can be completely removed after use. Each capsule has an enveloping membrane thatcompletely encloses the interior of the capsule. The membrane comprises at least tworadially superimposed layers, each fully enclosing the layer(s) below, which enables thetransparency and mechanical stability of the membrane to be adjusted.  The content ofthe microcapsules can be liquefied.

Abstract: An improvedmethod for extracting soluble solids from coffee are described. This is achieved by usinga three-stage counter-current extraction process. The first extraction uses a liquid witha temperature between 80 and 160 C; the second extraction takes place at a temperaturebetween 160 and 190 C. The third extraction takes place after the coffee grounds have beenhydrolysed. The hydrolysed coffee extract can be collected or used as the first or secondextraction liquid. This process gives an extract with a good flavour and yield that can bespray- or freeze-dried.

Abstract: A closure for abeverage can is described.  The one-piece closure may be opened with one hand. The closure has a projection with a peak, and is provided with score lines. The canis opened by pressing against the projection.  This causes the material to tear alongthe score lines.  No supplementary parts, such as rings, tabs or rivets, are neededto allow the closure to be opened.
