With soymilk, there's no evading the paramount issue of taste

  • An Arthur D. Little study showed seven different soy brands came up short in what it called Flavor Leadership criteria. And the refrigerated versions did not outdo their shelf-stable brethren for flavor quality.
  • Mouthfeel was off to the trained testers who took part in the research. "Musty" and "burnt protein" were used to describe aftertaste.
  • Vanilla received more favorable responses than plain versions of soy milk.
  • Beyond adding flavors, sweetening is seen as an answer. WhiteWave has added "milled organic evaporated cane juice" - also known as sugar - to each of its Silk flavors. Silk also increased its fat content ever so slightly.
  • 8th Continent, meanwhile, relies on sweetening and artificial flavors to make soymilk go down that much easier with consumers who might otherwise pass.

Flavor is an essential weapon in winning the hearts, minds and tastebuds of consumers across beverage categories. Soymilk marketers have decided they should be no different.

  • Vanilla is quite common and chocolate is catching up.
  • Sun Soy introduced a coffee-flavored soymilk in 2001.
  • WhiteWave added Chai, Mocha, Hazelnut and French Vanilla to its menu.
  • Vitasoy hired a couple of sommeliers to describe the tastes and aftertastes of soymilks. They detected overtones of chestnut, macadamia, black tea, banana, oatmeal and malt.

It's not exactly Coke, Pepsi, Cadbury, private label and a bunch of Lilliputians, but soymilk is a relatively consolidated category.

  • The Soyfoods Association of North America's directory of soymilk producers and marketers contains a list well shy of triple digits.
  • And in that universe, two brands, Silk and 8th Continent, stand out. They combined for more than three-quarters of all soymilk/dairy alternative sales in the U.S. in 2012. In actuality, the WhiteWave brand alone clearly dominates.
